Our Story
Phat Bagel started with our founder, Dexter, rolling dough in whatever kitchens he could get access to - early mornings, late nights, and a whole lot of trial and error. Along the way, he learned from a New York bagel maker who later opened Auburn Bagel Company, sharpening the craft and dialing in the texture and chew he’d been chasing.
The Bloomfield Saturday Market became home base, and the bagels kept selling out. From the beginning, Dexter had a specific vision: let people customize everything - their cream cheese, their bagel, their breakfast sandwich - and make it all actually taste incredible. That idea stuck, and the flavor experiments only grew as the pop-ups did.
Now he's taken that early concept and built a shop around it - same spirit, just elevated. More space, better tools, and the perfect setup to finally bring Dexter’s custom-spread concept to life. It’s a new way to eat a bagel, and we’re bringing it to Pittsburgh.
